Chicken Mojito

Chicken Mojito - As the weather begins to warm this dish is excellent for the Grill
Chicken breast (6oz boneless filets)
4 each
Dijon Mustard
Olive Oil

Salt and pepper to taste

Marinate the chicken breast with the mustard and oil refrigerate for 2 hours before grilling

Mojito

Grapefruits

2 each cut into segments

Oranges

2 each cut into segments

Cilantro

3 tablespoons

Garlic

2 cloves

Red Onion

¼ cup

Olive Oil

2 ounces

Juice 2 Limes

Wine Vinegar

1 tablespoon

Ground Cumin

1 teaspoon
Salt and pepper to taste  

Preperation:

Place all the ingredients into a bowl for one hour before use.

Grill the chicken breast 4 min. per side or until thoroughly cooked, place on a serving platter.
